I'm so glad I got the opportunity to visit Isabel in Boulder for the UW husky football game. We went straight from the airport to the stadium at 10am and watched the huskies take on another W for their record!
After the game, Isabel took me to my new favorite restaurant, Protein Bar. I had their Pesto and Spinach Quinoa bowl with avocado, and an Espresso protein shake. The best part was that I had the choice of what type of protein I wanted (I chose Whey), and what kind of milk (soy). Washington needs a Protein Bar!
I couldn't go to Colorado and not go on a hike, so Isabel took me to Sanitas, which reaches 6750 feet elevation. It's one of her favorite hikes. We hiked a little over 1500 feet and about 4 miles round trip. The view from the top was gorgeous. Well, it was actually phenomenal from the minute we got on the trail, but the dust, rocks, and steep incline kept my eyes glued to the ground most of the time. Outdoor workouts beat doing cardio at a gym any day.
After the hike, her parents took her sisters and the two of us out to dinner at a place called FATE Hub and Brewery. We ordered the roasted cauliflower and vegetable dish and caramelized sweet potatoes for an appetizer. I had an amazing salad for my entree with a cranberry vinaigrette dressing, and avocado of course. To top it off, we went out to frozen yogurt. They even had gluten free brownie toppings (you don't see that in Washington). Finally, we drove up to a viewpoint lookout in Flagstaff with her sisters, which overlooks all of Boulder and the mountains.
This morning, we went to Pearl Street in downtown Boulder. We got coffee and a gluten free pumpkin muffin at a cafe called The Cup. We met up with her parents and sisters for breakfast at a place called Snooze, where I had the best breakfast I've ever had. I ordered gluten free cinnamon swirl pecan pancakes, gluten free "OMG French Toast" with strawberries and powdered sugar, and an egg over easy (all about that protein). You could say it was my cheat day ;) The restaurant was playing throwback rap music and everyone was having a good time. After breakfast, we walked around the shops and bought souvenirs.

Overall, Boulder was an amazing experience and such a breathtakingly beautiful place. I can only imagine what it's like when it's snowy. The food is healthy and delicious, the people are happy, and the mountains are calling.
